Chili-Lime Fried Fish
 
Yield: 4 servings

2 lbs fish filets
1 cup peanut oil
salt & pepper to taste
1 cup mayonaise
2 Tb chili powder
2 Tb ground cumin
2 Tb hot sauce
3 Tb sweet relish
4 Tb fresh cilantro chopped
1 cup milk
2 ts red pepper flakes
1 Tb dried oregano
2 ea limes juice of
1 cup cornmeal
1 cup flour
2 ea eggs

Combine all the ingredients in bowl.
Be sure to mix well.
Set up your batter mix in 3 bowls.
1st. bowl flour.
2nd. bowl combine eggs, milk, salt & pepper.
3rd. bowl  cornmeal.
Cut fish into pieces approx. 1" x2" x 1/2".
Dredge fish through flour, then egg-milk mix & then cornmeal.
Heat peanut oil over med-heat in a deep pan.
When you see bubbles when you drop in a bit of egg-milk mix.
Fry fish 1 1/2 -2 mins.
Remove & drain.
Serve with sauce poured over or as a dipping sauce.
